practice run...

These pics are a tad fuzzy, but you get the idea... we did some appetizer testing last night for the rehearsal.. timing, taste, and ease of prep. So for appetizers the winner is, brie/raspberry tartlets, mini baked potatoes with aioli sauce, bacon and chives, and then not shown goat cheese, sun dried tomato, and pesto torte in heart shaped molds served with asst crackers...

o.k. so here is the rest of the rehearsal dinner menu New York Strip Loin (done in a smoker with oak chips)
Quartered Rosemary Lemon Chicken
Salmon Fillet

Organic Baby Green Salad with goat cheese,
caramelized pecans and heirloom tomatoes
(served with homemade salad dressings)

Pasta Salad with basil, pine nuts, garlic and sun dried tomatoes

Sweet Potato salad (my brother is making that)

fresh baked rolls served with real butter

Dessert: Homemade and decorated cupcakes
Homemade and decorated starfish shaped
sugar cookies, coffee bar, Italian soda bar, tea...


and for the wedding shower menu... mini turkey burgers with caramelized onions,chipolte mayo, sweet potato fries and individual radicchio salad cups with organic greens, lemon cheesecake bars, and toasted coconut bars, oh and again, coffee bar, tea, sparkling water..
whew, i am tired and I haven't even been in the kitchen yet, 17 days and counting....
